Nachos recipe

    • Sunflower Nachos recipe 
      • Dice one onion finely, mince three garlic cloves, grate one carrot and one courgette.
      • Heat  oil in a fry pan and fry onion until soft.
      • Add 500g of mince and the garlic and fry until mince is browned, then add the carrot and courgette to the pan. Fry for two more minutes. Add one cup of veggie stock, one can of crushed tomatoes, two  tablespoons of tomato paste and herbs and spices (you can use mixed herbs or mexican spices, salt and pepper). Reduce to low heat and simmer in the pan for at least 15 minutes (longer for flavour and a thicker sauce). 
      • Put baking paper on an oven tray and spread corn chips over it.
      • Grate cheese and sprinkle over chips. Grill in the oven for five minutes or until the cheese has melted.
      • Arrange grilled cheese corn chips on a plate to look like the petals of a sunflower. Place  spoonfuls of the mince mixture at the center to look like the middle of the sunflower. Also top with sour cream and extra cheese (and avocado if you want). Enjoy!

Next time when you are sharing a recipe it would be great to use numbers instead of bullet points, so it is clearer to follow along with each step. Keep up the active blogging!
